Blood Sugar Supportive French Toast

This blood sugar–supportive French Toast is a balanced twist on the classic breakfast favorite. It’s a satisfying, nourishing option that delivers comfort and steady energy without the usual sugar spike to start your day. For added satiation, I sided this toast with 2 hard boiled eggs.

Serves 2-4
Ingredients:
2 eggs
1 tbsp pumpkin pie spice or ground cinnamon
1 tsp vanilla extract
1/4 cup milk of choice (I used coconut milk)
4 slices of bread of choice (I used sourdough)
Toppings (optional): 2 tbsp plain greek yogurt or coconut yogurt, berries, granola, ground cinnamon, 1 tsp honey or maple syrup drizzle
Method
Whisk the eggs, spices, vanilla and milk together in a tupperware (ensure tupperware is big enough to fit a slice of bread).
Place one slice of bread into the batter and thoroughly coat the front and back.
Cook bread in a pan over medium heat until the bottom of the bread starts to get golden brown and flip.
Repeat with remaining slices of bread.
Top with toppings of choice.
