This one-pan Mediterranean chicken is a simple, flavor-packed meal that brings bright, savory ingredients together with minimal cleanup for any night of the week.

Serves 2-3
Ingredients
Chicken
1 lb chicken
1 lemon squeezed
1/4 cup olive oil
2 tbsp dried oregano
1 clove garlic minced
1 cup cherry tomatoes
1 sweet potato
1 zucchini
8-10 pieces of asparagus
Tzatziki sauce:
1/2 cup plain greek yogurt
1 tbsp freshly chopped dill
2 tbsp finely chopped cucumbers
1 clove garlic minced
1 lemon squeezed
1 tsp olive oil
Method
Combine all chicken ingredients on a pan.
Cook on 400 degrees F for 20 minutes or until the chicken is cooked through.
If the chicken is cooked through before the vegetables, place chicken on a plate and continue to cook vegetables until soft and roasted, if needed
Top chicken with tzatziki sauce and enjoy!
