Ingredients

  • 1 cup shredded or grilled chicken

  • 1/2 cup jasmine or basmati rice

  • 1/2 cup pre-cooked beans (optional)

  • 2 tbsp guacamole

  • 2 tbsp salsa or pico de gallo

  • 1/2 fresh lime squeezed

  • 1 cup butter lettuce

Method

  1. Place rice and lettuce in a bowl

  2. Top with chicken, beans, guacamole, salsa/pico and fresh lime
